The Perfect Summer Paloma

As the summer heat rolls in, cool off with our Perfect Summer Paloma. This refreshing cocktail mixes artisanal blanco tequila with freshly squeezed grapefruit and lime juices, topped off with a splash of our favorite Topo Chico for a little extra fizz. Sweetened with a homemade mint-jalapeño simple syrup, this refreshing bev brings just the right kick. Serve it up with a salted rim and a garnish of grapefruit, jalapeño, and mint for a drink that's as visually aesthetic as it is delicious. Whether you're hosting a summer backyard BBQ or just kicking back after a long day, this Paloma is sure to impress.

INGREDIENTS:

*Makes one cocktail

2 oz. Blanco Tequila (We prefer Siete Legunas, but any Artisinal brand of Blanco Tequila will work)

2 oz. freshly squeezed grapefruit juice

1 oz. freshly squeezed lime.

2 oz. Lime Topo Chico

½ oz. (1 tablespoon) of simple syrup

Rub lime or grapefruit wedge over rim of glass (ideally frosted in freezer).  Dip into plate of sea salt.

Mix ingredients together in cocktail shaker with ice, strain, and serve. We garnished with a dehydrated grapefruit wheel, jalapeno slices, and fresh mint leaves. Cheers!

*To make simple syrup combine 1 cup of water with 1 cup of sugar in a small saucepan over medium heat and wait until sugar dissolves.  Once sugar is dissolved add mint leaves and one sliced jalapeno with seeds removed.  Let steep for 15-20 minutes before straining.  Chill in refrigerator.
